Rapini (Broccoli rabe) in Mustard Vinaigrette
Broccoli rabe is a nonheading variety of broccoli that's also known as broccoletti di rape, brocoletto, rapini, choy sum, or Chinese flowering cabbage. I stopped into on of my local Organic friendly grocery stores and with great pleasure discovered the fresh savory Broccoli Greens. Broccoli Rube is one of my favorite greens to make veggie dishes with. It is already soft and feels somewhat wilted so making a “sautéed veggie” dish by marinating these tasty leafs work quite well. In this case I marinated them chopped up in a sweet mustard vinegar dressing and served it with sweet Cherry Tomatoes.
The dressing was about 4 tbls water, 3 tbls raw apple cider vinegar, 2tsp Powdered Mustard Seeds, 1 tbls Agave, ½ tsp Sea Salt and some black pepper. Drench the chopped greens in the dressing and let it set for 2hr. Then drain well and serve with Cherry Tomatoes.
PS Keep the Marinade after you drain the Greens. It will make a tasty Salad Dressing.
